Low and Slow Prime Rib Recipe

  1. Prepare the Prime Rib:
    • Gather all ingredients. Place the prime rib on a pan and rub it thoroughly with salt. Position the meat on a rack or twisted foil to allow air circulation and refrigerate for 24 to 48 hours.
  2. Season and Rest:
    • Remove the prime rib from the fridge and let it rest at room temperature for a few hours. This step is optional but helps in even cooking.
  3. Preheat and Roast:
    • Preheat your oven to 300°F (150°C). Place the roast in a roasting pan, preferably on a rack. Mix the butter with salt, pepper, and cayenne, and spread this mixture on the top and sides of the roast. Add water to the bottom of the pan.
  4. Cooking:
    • Roast the prime rib in the preheated oven until the internal temperature reaches 115-120°F (46-48°C), which should take about 1 hour and 20 minutes (approximately 20 minutes per pound).
  5. Rest and Serve:
    • Remove the roast from the oven, cover it with foil, and let it rest for at least 20 minutes. This resting period is crucial for the juices to redistribute, ensuring a tender, juicy prime rib.
    • The drippings from the pan can be deglazed with broth or water to make a flavorful gravy.
